An Ji Bai Cha, or An Ji White Tea (in English), An Ji refers to the place where it is grown: An Ji county of Zhejiang province. Because of its Chinese name, An Ji Bai Cha is sometimes called as "white tea", but, classified by its production process, it is a green tea, not a white tea. The term white refers to the whitish color of the leaves, and the pale color of the brewed tea.
The An Ji Bai Cha is picked between around 12th to 14th April in Anji county. The leaves are long, delicate and a bright vivid green, the scent has notes of citrus and nuts, and the taste is a complex mix of tangy fresh and creamy soft. The liquor is a lively pale green with the bright clarity of a classic high-grown mountain tea.
