Bai Lin CongouBai Lin Congou IntroductionBai Lin Congou(白琳工夫红茶) is a rare, hand-crafted black tea produced in the Fujian province. It is a "gongfu" or "congou" type of tea -- which means that is made with disciplined skill (congou) to produce thin tight strips of leaves. Bai Lin Congou has a history of more than 150 years, it is one of three famous Fujian Black congou teas, the other two are Zheng He Congou(Ching Wo), and Tan Yang Congou. It is said that first Keemun Tea makers learned Bai Lin production skills and know-how and later created Keemun Congou, one of the worldwide famous black tea. Bai Lin Congou produces clear liquor which has a bright red color with a thick and smooth texture. It has a mellow aroma that is rich and without any hard edge.
Bai Lin Congou Producing AreasBai Lin Congou is produced in the Bailin, an area around Tailao mountain, Northeast of Fujian province which is adjacent to Zhejiang province. Since 1850s tea merchants from Fujian and Guandong province gathered in Bailin to collect roughly manufactured black tea from surrounding areas. The teas then went through a refinement process and became Bai Lin Congou. The refinement process includes procedures such as screening, cutting, winnowing, re-baking, fanning (blow away dust) blending and packing. Bai Lin Congou has pleasing golden-orange pekoe on tender buds. It is also called as tangerine black.
